This is a great recipe when you find some of that duck hidden deep in the freezer, or maybe you’re cooking for a crowd that doesn’t appreciate “wild game” flavors as we do. One of the reasons I like this recipe so much is you can add your own twist depending on what you toppings you like. It’s very simple to make and absolutely delicious!

Step 1: Run 4-5 duck medium duck breasts through a meat grinder (Photo 2)

Step 2: Heat a large skillet on medium heat, add 2T of butter and once the butter melts, add the ground duck.

Step 3: Mix in your spices while the duck cooks (Photo 3-4)

  • 2 tbsp oregano

  • 1 ½ tbsp basil

  • 1 tsp rosemary

  • ¼ tsp dried thyme

  • ½ tsp crushed rep pepper

  • ¼ tsp garlic powder

Step 4: Brush Pizza crust with oil and spread pizza sauce evenly (Photo 5)

Step 5: Add ground duck and additional toppings (pepperoni, peppers, onions, mushrooms, etc…) before covering with shredded mozzarella. (Photo 6-7)

Step 6: Cook pizza at 450 degrees until the crust is golden brown and cheese is melted. I would suggest 475 if cooking on the grill and expect a crispier crust but it’s still really good! (Photo 8-9)

Step 7: Sit back and enjoy the pizza while observing how many people are surprised that duck could taste this good!
